MINCED CHICKEN SKEWERS

These healthy minced chicken skewers are packed with protein and flavour,making them ideal for weeknight dinners.

  • SERVES : 4
INGREDIENTS:
  • 500g Chicken breast, diced
  • 2 cubes of Surya Crushed Ginger Garlic
  • 1 whole Surya Green Chilli (Hari Mirch)
  • 100g Coriander leaves, washed
  • ½ White onion, diced
  • ¼ tsp Coriander powder
  • A pinch of turmeric powder
  • Salt, to taste
  • 10–12 Medium-sized wooden skewers
  • 50ml Olive oil
METHOD:
  • Pat dry the diced chicken using kitchen towels and set aside.
  • In a food processor, add the ginger garlic cubes, green chilli, coriander leaves, white onion, spices, and salt. Grind till smooth.
  • Add the chicken in and grind again until the chicken is minced well, reaching a paste-like consistency.
  • Take the wooden skewers and, using your hands, shape the mince onto them like kebabs.
  • In a shallow pan, heat 2 tablespoons of oil. Bring to medium heat and start placing the skewers on the pan.
  • Cook for 3–4 minutes on one side and then turn.
  • Continue until the chicken is cooked through evenly and starts to get a light brown colour.
  • Serve piping hot with a side of coriander & mint chutney or herbed yoghurt for dipping.
